Kristen, how wonderful to hear Dexter shows you a zest for life and wants to play. He'll do just fine in enjoying life whether nerve function comes back right away or after crate rest is over he’ll still need more time to self repair his nerves to the extent possible.
It is clear that dogs think they are handicapable! As long as they have your love, a warm bed and food, life is as it should be. They just do not fret over the manner in which they get from point A to point B, just that they CAN do it!

As from your point of view in this new thing of caring for your dog...it is all a matter of establishing a new normal routine. Do know you have everything already inside of you needed to conquer any new challenge! -- This means you will not be going outdoors in cold, inclement weather standing there while he sniffs to find just the "right" spot. You will be expressing Dexter in the comfort and warmth of your bathroom til his bladder control returns.
-- You will learn his body function times and be able to express to eliminate accidents. That includes expressing for poop!
-- You'll find those little things to make life easier such as a piece of vinyl flooring over needed threshholds, a curtain type screen your dog can negotiate out onto the deck for sunning, ramps to slide or when in the cart roll down.
I lived with my boy for 10 years after a back surgery before a cancer suddenly took him. Those were the most wonderful years. He slept with me every night. Sat beside me as I wrote on the Forum taking a slide down the ramp to the floor whenever the kitchen or knock on the door needed his investigation. Life was the same just different! You'll, also, do just fine in loving and living with your Dexter.
